Dr. Poliana Mendes de Souza is a Professor (HDR) in Food Science and Technology at ASARI, Mohammed VI Polytechnic University (UM6P), Morocco. She earned her PhD in Food Technology from Universitat Politècnica de València, Spain (2012), including a research stay at the Max Rubner Institute (MRI) in Germany. She also holds an MSc in Food Engineering from UNICAMP, Brazil (2007), and a BSc in Food Engineering from PUCPR, Brazil (2006). From 2013 to 2024, she was an Associate Professor at UFVJM, Brazil, where she led the Graduate Program in Nutrition Sciences and the Emerging Food Processing Technologies Research Group. Her research focuses on the processing, safety, and valorization of animal-derived foods, including camel milk and dairy products, meat, and animal by-products. Her work includes non-thermal preservation and drying technologies, protein functionality, and the development of functional ingredients and foods. She supervises graduate and undergraduate researchers and has authored peer-reviewed papers, book chapters, and conference publications. She collaborates with industry and community partners.

Dr. Soumaya Boukrouh is an Assistant Professor at ASARI, Mohammed VI Polytechnic University (UM6P), Morocco. She earned a PhD in Veterinary Sciences from the University of Liège, Belgium (2023), through research conducted in collaboration with the Animal Nutrition Laboratory at the Regional Center of Agricultural Research (CRRA) in Tangier, part of Morocco’s National Institute for Agronomic Research (INRA). She holds a degree in Agricultural Engineering, specializing in Biotechnology and Animal Production, from IAV Hassan II, Morocco (2017). Her research focuses on valorizing local and alternative feed resources to improve livestock productivity, animal-product quality, and the resilience of livestock systems.
