Description

Enzymes in Production of Bioactive Peptides and their Functions examines the critical role of enzymes in the generation, modification, and physiological regulation of bioactive peptides across food, health, and therapeutic contexts. The book bridges fundamental enzymology with translational biotechnology, demonstrating how enzymatic processes drive the discovery, optimization, and clinical potential of bioactive peptides as nutraceuticals and therapeutic agents. The volume is organized into four parts. The first section explores enzymes in the production and bioprocessing of bioactive peptides, highlighting plant, animal, and microbial enzyme systems, as well as fermentation and AI-driven optimization techniques. The second section focuses on enzymatic stability and modification, addressing gastrointestinal digestion, peptide bioavailability, and structural enhancements. The third section investigates enzymes as bioactive peptide targets across cardiovascular, metabolic, inflammatory, and neurodegenerative pathways, detailing molecular mechanisms and inhibitory kinetics. The final section translates this knowledge into practice, examining peptide-based biocatalysis, industrial enzymatic processing, and clinical applications, with discussion of regulatory frameworks and commercialization strategies. This book is a valuable resource for biochemists, molecular nutritionists, enzymologists, and biotechnologists working in academia, industry, and clinical research. It also serves students, pharmaceutical scientists, and food technologists seeking to apply enzymatic science in the design of functional foods, nutraceuticals, and therapeutic bioactive peptides.

Chibuike Udenigwe

Editor

Prof Chibuike Udenigwe is a Professor at the University of Melbourne, Australia. Prior to his current role, he has held academic positions as a Full Professor and the University Research Chair in Food Properties and Nutrient Bioavailability at the University of Ottawa, and pervious positions at Dalhousie University, both in Canada. He received his BSc Honours in Biochemistry at the University of Nigeria, Nsukka, an MSc in Chemistry and PhD in Food and Nutritional Sciences at the University of Manitoba, Canada and was a Natural Sciences and Engineering Research Council of Canada (NSERC) Postdoctoral Fellow in Food Science at the University of Guelph, Canada.

His research in food function and health takes the chemical sciences approach in exploring various fundamental and applied aspects of proteins, including sustainable processing and production systems, bioactive peptides, food matrix interactions, digestion kinetics, bioaccessibility and bioavailability, colloidal systems for delivery functions, novel biomaterials (hydrogels & bioplastics), and nutritional quality. His research goal is to transform sustainable proteins into value-added products that foster a healthy society and create bio-based solutions to food systems challenges.

Professor Udenigwe was elected as a Fellow of the Royal Society of Chemistry in 2023, Fellow of the African Academy of Sciences in 2023, and Fellow of the Agricultural and Food Chemistry Division-American Chemical Society (AGFD-ACS) in 2024. He is also a recipient of several international awards including AGFD-ACS Young Scientist Award (2018), the American Oil Chemists’ Society (AOCS) Young Scientist Research Award (2018), and the International Union of Food Science and Technology Young Scientist Award (2012). He is the Editor of “Food Proteins and Peptides: Emerging Biofunctions, Food and Biomaterial Applications” (RSC, 2021) and Co-Editor of "Bioavailability of Nutraceuticals and Bioactive Compounds" (CRC Press, 2025). He serves on AOCS Governing Board and on the editorial boards of ACS Food Science and Technology, Journal of Functional Foods, and Food Hydrocolloids for Health.
