Eliseo Cárdenas Hernández
Eliseo Cárdenas Hernández is a Pharmaceutical Chemist Biologist from the Autonomous University of Coahuila (UAdeC), Mexico. He obtained his master's degree in Food Science and Technology from UAdeC and a master's degree in Biological Sciences from the Federal University of Pernambuco, Brazil. He is a PhD student at the same program. He is a candidate for State Researcher by COECYT, Mexico and is a member of the Mexican Association of Food Science. He obtained the Lobo Award of Excellence in Academic Activities of the UAdeC in 2021. In addition, due to his master’s studies, he was recognized with the “Juan Antonio de la Fuente” Medal (UAdeC) in 2024.
His scientific productivity includes several articles and book chapters. Also, he is a peer reviewer for the international journals Heliyon and Journal of Cleaner Production of Elsevier, and has actively participated in national and international congresses as part of the organizing committee, speaker or assistant.

Rafael Matos Ximenes
Prof. Dr. Rafael Matos Ximenes is a pharmacist with an MSc and PhD in Pharmacology. He has been a Full-time Professor at the Centre for Biosciences at the Federal University of Pernambuco (UFPE), Brazil, for the past decade. During this time, he also served as a visiting researcher at the University of Nantes, France, and the University of Seville, Spain. At UFPE, he was Chair of the Doctoral School of Biotechnology (2019–2023) and Vice-Chair of the Doctoral School in Pharmaceutical Sciences (2016–2017). As the Principal Investigator of the Research Group on Ethnopharmacology and Phytochemistry, his work focuses on the intersection of food and drugs, particularly exploring bioactive compounds from Amazon and Caatinga biodiversity for the prevention and treatment of immuno-mediated chronic inflammatory diseases. Throughout his career, he has supervised 12 PhD theses and 10 MSc theses and has published more than 65 papers in international indexed journals.
